Weekend Wonderment

This past weekend was not only productive, but down right fun!

I did a little "school work" on Saturday afternoon and the rest of the weekend was mine. (Or should I say "ours" since my hubby was home?!) It's quite rare that I have that much free time on a weekend, so I took full advantage of it.

I seriously don't know what came over me, but I was motivated to cook. I know, I know...can you believe it?! I think Pioneer Woman's cookbook was the impetus I needed to get my you-know-what into the kitchen.

For dessert Saturday night, I whipped up Patsy's Blackberry Cobbler from PW's cookbook. Did I mention that I am in lust with her cookbook? All of the step-by-step instructions are accompanied by pictures--a true blessing for a visual learner like me! (Now, I just need a cookbook stand.)

On Sunday morning, Brian and I cooked up another PW recipe. This time, we made an "Egg-in-a-Hole" for breakfast. Well, technically speaking, we made about four--two for each of us--but who's counting?! And the funny thing is, I'm not really an egg person. I eat them every so often, usually scrambled, but these Eggs-in-a-Hole were just superb. And so simple. :-)

You'll notice I have no pictures to share. What can I say? I was just too busy eating...

After church on Sunday morning, while Brian watched back-to-back football games, I delved into two watercolor projects I'm working on for a USD class called "Teaching Art to Children." For the purposes of this independent study class, I am the child. I'm, by no means, creating masterpieces, but I am having fun. For me, watercolor painting is much like coloring. I don't do it very often, but whenever I do, I feel so relaxed and at peace.

P.S. Speaking of color and peace--please bear with me as I'm a stream-of-consciousness writer--last week, I witnessed the coolest thing while I was driving home from work. I saw a rainbow from beginning to end. First time I'd ever seen an entire rainbow! Its arch stretched right over I-80 between Truxel and Northgate. I made a wish as I passed below it, but if I'd been granted a second one, I would have wished for a camera to capture it.
