Joe's Pesto Chicken

Earlier this week, I shared with you the yummy Ranch Chicken recipe that Brian brought home from the fire station months ago. Today, I'd like to tell you about another delicious chicken recipe. (Well, that is if you like pesto!)

This one is called Joe's Pesto Chicken. It's named after Joe, an engineer Brian worked with for several years at Station #41. Joe made this pesto chicken for Brian (Thanks, Joe!) and Brian then made it for me...and now, I'm sharing it with you.

Ok, let's talk chicken!

For this recipe, you'll need boneless, skinless chicken breasts, mozzarella...


fire roasted red peppers,


and pesto.

Oh, and a BBQ!

Here's how to dress the chicken before placing it on the BBQ.

First, butterfly each chicken breast. (In other words, cut each breast horizontally--almost but not entirely--in half and open it up like a book.)


Then, place a fire roasted red pepper (straight out of the jar) and a slab of mozzarella inside the chicken breast.


Now, put the chicken breasts onto the BBQ.


Add pesto on top to your liking and cook!
(I love this striking color combo--green, red and white--against the black grates.)

I asked my hubby how long he typically cooks the chicken breasts on the grill, but he wasn't sure. Just to be positive that they are done, we always cut into one of the breasts to check to see that the meat is white and well-cooked. Rather be safe than in the bathroom! (Ha-ha!)
