Making Jam with My Mama

The other night, my mom and I made No Cook Freezer Jam. Yes, you read that right...we made jam without cooking the fruit! Freezer jam is a cinch to make and oh-so-yummy! And it doesn't taste like Smucker's or any other store bought jam. My mom has made this jam many times before, but it was a first for me. I made strawberry jam and my mom whipped up blackberry jam.

The Cast of Characters: Strawberries (or your favorite fresh fruit)--enough to yield 4 cups crushed; Sugar (1 1/2 cups) OR Splenda; and Freezer Jam Fruit Pectin

The recipe for the jam is right on the back of the Fruit Pectin package. So, let's get started...

1) Stir the sugar and fruit pectin in a bowl until well blended.

2) Stir in 4 cups of crushed fruit. (I cut my strawberries in half and then smashed them with a potato masher.)

3) Stir the sugar, fruit pectin and fruit for 3 minutes.

4) Ladle the jam into clean jars to the fill line. Twist on lids.

5) Let stand until thickened, about 30 minutes.

6) Enjoy now (the jam can be refrigerated up to 3 weeks) or freeze for up to one year!

I put my jam in these tiny 4-ounce Ball jars. They are the perfect size to give to friends, family, neighbors, or colleagues. I placed eleven of the twelve jars in the freezer and put one in the fridge. Half of that one is already gone because each morning along with my cereal, I've had strawberry jam on a whole wheat English muffin. Yum!

How fun! My mom just brought down a big box of apricots from her farm and tomorrow I will be "Making Jam with My Mama".
I told Joe that he was famous now because his chicken recipe is featured on your blog :)

I LOVE making freezer jam. My mom always made it and it's soooo hard to eat storebought! I've never seen that pectin..we always use MCP...I'll look for that one. Almost out of my strawberry but we're working on the blackberry from last year! :-)
